Raspberry Blood Orange Parfait

This Raspberry Blood Orange Parfait is made with Greek yogurt and a raspberry orange chia seed compote, making it a healthy and delicious dessert and breakfast option!

Raspberry Blood Orange Parfait

Prep Time: 10 minutes – Seriously!

Servings: 1

Ingredients:

  • 1 cup plain Greek yogurt

  • 1/2 cup raspberries

  • 1 blood orange, peeled with seeds removed

  • 2 tsp chia seeds

  • 1-2 tbsp pomegranate seeds

  • 1-2 tbsp chopped dark chocolate, or more

Instructions:

  1. Begin by making the compote. Combine the raspberries and orange in a pot over medium-high heat, using a wooden spoon or spatula to break up the raspberries and release the juices.

  2. Once mixture comes to a low bubble, reduce heat to a simmer and stir in the chia seeds. Allow to simmer for 2-3 minutes and then remove from heat.

  3. Ideally, you’ll want to wait until your compote cools before eating your parfait, but if you’re too impatient (WE know the feeling) you can just layer the yogurt and raspberry orange compote, top it with some pomegranate and chocolate and dig in!

  4. To speed up the cooling process, you could always pour the compote into a bowl and place the bowl in the freezer or refrigerator.

Tip: If you want to make this into more of a dessert parfait, feel free to use half the amount of yogurt and sub in 1/3 cup mascarpone cheese and 2 tbsp powdered sugar. It’s delightful!
