Fresh Orange Salad with Baby Beets

This Foodie Friday, I’m sharing a recipe for one of my favorite beet salads. Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium and manganese; the list of nutritional benefits goes on and on!. Thank you Luci for this simple, healthy, refreshing salad recipe that is oh so pretty.

 

FRESH ORANGE SALAD with BABY BEETS

 

yield: 4 servings

 

Ingredients

  • 16 oz. steamed baby beets (12-18 baby beets)

  • 2  medium oranges, peeled

  • extra virgin olive oil

  • honey

  • optional salted pistachios, roughly chopped

Instructions

  1. Cut baby beets in half. Cut larger baby beets in quarters if desired. Place half on plate.

  2. Slice oranges (across) into 4 thick slices each. Cut slices along segment lines. Place half on top of beets.

  3. Add remaining beets, then oranges to plate.

  4. Drizzle beets and oranges with olive oil, honey, and pistachios. Serve immediately or chill until ready to serve.
