With summer in full swing, fresh cherries and blackberries are in abundance. What better time for us to share another one of our favorite salads by Luci’s Morsels. This slightly sweet, flavorful salad is perfect as a refreshing afternoon snack or light meal.
Berry + Burrata Salad
4 oz. burrata cheese
2 Cups berries (mixed)
1 Cup pitted cherries
2 Tablespoons granola (optional)
1 teaspoon honey
1 Tablespoon olive oil
1/2 lemon, juiced (approx. 1 Tablespoon)
1/4 teaspoon salt
1/4 teaspoon fresh cracked pepper
In a large bowl, microwave honey for 10 seconds. Mix with remaining dressing ingredients. Toss with lettuce. Remove to serving bowl.
Just before serving, pull burrata apart over salad. Top with berries and cherries. (Option to top with granola for an added crunch).
